Composition, enzyme and antioxidant activities of pineapple

Three pineapple cultivars smooth cayenne, Tainung 17, and 19 were processed into flesh, peel, stem. Nine samples analyzed for their proximate compositions bromelain activity existed in water extracts. Pineapple fleshes rich reducing sugars soluble fiber whereas peel stem crude fiber. Stem showed higher (102–247.3 U/mg). All 18 including ethanol extracts quite effective the scavenging ABTS+- DPPH-radical activities power as evidenced by low EC50 (0.98–15 mg/mL). Water of more than The ABTS+-radical ability was highly related with total phenols flavonoids. Overall, high amounts fiber, exhibit antioxidant activities. These wastes would be utilized to develop a sweet supplement or functional product.
